Left Over Sunday Lunch Pie

A Monday Meal With Sunday Leftovers


This is my favourite creation! (Although I’m sure I’m not the first to think of it..) This is a super easy Monday meal which is based around the left overs of a Sunday roast, I usually use chicken as if we have a roast we will usually have a roast chicken - but of course you can use any meat.

Firstly we take all the left over meat from the chicken and pop in a bowl then cover with our fabric bowl covers (a great alternative to single use plastic!) then the same with any veg & gravy and keep in the fridge until the next day.. or the day after that!

Method

  1. Heat the oven to 180 degrees

  2. Chop some onions and garlic, toss with butter, salt & pepper and cook in a large pan until soft.

  3. Add your leftover vegetables into the same pan as well as your meat & any extra vegetables; I usually go with spinach and mushroom!

  4. With the heat on low pour in your left over gravy or use a cream if you prefer a creamier taste (or both!) I usually use alpro soya single cream as I prefer a dairy alternative.

  5. Cook the above together for 20 minutes on a low heat before transferring to an oven proof pie dish.

  6. Cover the top with ready rolled puff pastry; I like to get creative with the leftover pastry and use cookie cutters to make shapes to decorate the top of the pie..

  7. Brush the pastry with some milk using a pastry brush

  8. Cook for 25-30 minutes in the middle of the oven - or until the pastry is golden brown, remove from the oven and enjoy! The best part is that this pie is so packed full of veg that you wont need much on the side! We will usually just have something green and leafy like more spinach or some brussels to add a little more greenery!

  9. Et Voila! Your super easy, less waste meal! Anything you don’t eat can be covered (TOP TIP; use our fabric bowl covers to keep it fresh) and enjoyed cold the next day with a salad!


This is the first of many recipe blogs and it is to celebrate the launch of our fabric bowl covers, which are perfect for left over food but also perfect for leftover fabric that isnt big enough to make cushions out of but will no longer go to waste, as conciously we are trying to become a sustainable brand as its something that we feel very passionate about!
