The Very Versatile Pancake


Pancake day is one of my favourite days of the year! I love it so much that I coined it ‘pancake fortnight’ and those that know me well will always wish me a happy pancake day - as if it were my birthday! Personally I love all pancakes and their toppings from the classic lemon & sugar, the super sweet toppings to something a little more savoury, so below I will be sharing some of my favourite creations!

Method - Plain base suitable for any toppings!

  1. This part works for all of the classic / sweet toppings and is pretty simple; crack three large eggs into a blender, add in 125g of plain white flour and 250ml of milk and blend until smooth.

  2. Pop a large spoon of butter into a pan and heat until sizzling ( the higher the heat the better)

  3. Use a ladle to add the batter into the pan - swill the mixture in the pan to create an even covering, and cook until the pancake starts to ‘bubble’

  4. FUN PART - FLIP! The best part of pancake making in my opinion!! TIP:easier option here is to use a spatula instead!

Topping ideas

  1. Classic lemon and sugar - Cut the lemons into wedges & sprinkle with sugar, the understated but incredibly enjoyable pancake


  2. Banana, Strawberries & golden syrup or honey - I love to chop up the fruit and add to mini bowls on the table so you can add more as you eat, you can also add cherries and orange segments for a more bitter sweet taste!


  3. ULTIMATE SWEET TOOTH - The Biscoff pancake! Melt two large spoonful’s of biscoff spread in a small pan and spread across the pancake, then crush a handful of biscoff biscuits and sprinkle on top - roll the pancake and top with more melted biscoff & biscoff crumbs! ENJOY!

Method - Beetroot base - a savoury dinner option

  1. Combine 160g buckwheat flour, 1 grated beetroot, 1 Egg & 250ml Almond Milk in a bowl

  2. Heat a large spoon of coconut oil in a pan

  3. Ladle in the mixture to create a thin layer in the pan & turn when bubbling (note these do not ‘flip’ that well…speaking from experience…)

Topping ideas

  1. Whizz up a tin of chickpeas, a spoon full of tahini, a good glug of olive oil, garlic clove & squeezed lemon in a blender to create a wonderful home made hummus, spread across your beetroot pancake & top with crumbled feta & avocado - enjoy as a pretty healthy pancake day (or any day) dinner!


  2. Spread with a home made tahini (yoghurt, garlic, grated cucumber, lemon juice & oil muddled in a pestle & mortar) Sprinkle with fresh rocket & water cress add meat or fish of your choice (I love Tuna with this - Steak or Tinned both work) Roll up and again enjoy as a healthy dinner alternative to the traditional pancake!


And if like me you don’t want to leave your four legged friend out, I use this super easy dog pancake recipe & top with some of his favourite treats… and some peanut butter !
